Food of Mount Lushan has adopted various dishes from other cuisines and formed its own characters.

With the development of tourism industry in recent years, Restaurants in Mount Lushan have increased gradually. Here we have a brief introduction of various famous dishes.

Lushan Stone Frog

Stone Frog ,also called Red Frog , grows in overcast ravine and rock and wall cave in Mount Lushan, .Its body is reddish brown. The forelimb is little, and the hind leg is strong. Some people like to call it " stone chicken" , because its meat is tender, luxuriant as chicken. Stone Frog hides in the rock caves in the daytime , whilelooks for food at night . Physique is similar to general frog, but the body is bigger than it. General weight is three or four liang (Chinese traditional unit of measure) , some one weighs 0.5 kilogram. Mount Lushan Stone Frog is easy to digest, nutritious, so the cooked food taking it as raw materials can be found in every restaurant in Mount Lushan. Among them" braising Stone Frog with sauce" is one of the famous dishes of Mount Lushan.

 

Lushan Stone Fish

Mount Lushan stone fish is transparent and has no scale. Generally speaking , It is about 30-40mm long, just as a embroider needle .Even after growing for 7 or 8 years, its size does not exceed one inch either, so it has another name called "embroider needle". Because stone fish of Mount Lushan lives in mountain springs and waterfalls and inhabits in rocks that waterfall flows through all the year round, So people call it Stone Fish. Stone fish grows among barranca brook of Mount Lushan,. It is little and slightly. Its meat is delicate and delicious, taste aromatic, therefore it is well-known around China.. Stone Fish can be fried, braised, stewed, steeped ,and it is the rare nourishing food for preganent women.

 

Lushan Stone Fungus

Both Mount Lushan Stone Fungus and dark auricularia auriculajudae are wild limb fungus plant at uninhabited overhanging cliff. The nutritive value of Stone Fungus is extremely high, including a lot of the glycogen, glue quality, the iron, phosphorus, calcium and many kinds of vitamin. Nutrition is very abundant. It is one high protein that treat yin deficiency tonic that moisten the lung.

The famous Ming Dynasty pharmacologist Li Shizhen record" Stone Fungus" in" Compendium of Materia Medica", " Mount Lushan There are many ground ear- like stone fungus. Mountain monk adopted it and exposed it to the sun and present it as gift to distinguished friends. Washing go sand and soil , it eats better than auricularia auriculajudae. " Li made exhaustive record of its medical function "slightly sweet , nonpoisonous. It benefits people for eyesight and skin by long taking.

Stone Fungus can relieve internal heat ,can manage dysentery, the poisonous snake bites, the toothache, and constipation etc., also can lower blood pressure ,which attract the masses of visitors to buy it.

Three-cup Chukar (a partridge)

Lushan boasts abundant fungi, groupers and chukars. The nourishing Chukar meat cooked with Lushan local cuisine methods are well received by domestic and overseas guests for its unique flavor.
Three-cup chukar is one of Lushan's traditional local dishes cooked without stock, the chukar meat is braised in one cup of rice wine, soy sauce and lard. So the dish gets its name: three-cup chukar. It is dark reddish brown, tastes good and gives off a strong fragrance.The dish contains protein, fat, inorganic salts, vitamins and so on. It can build up the stomach, nourish the blood and lower internal heat. In particular, it is diuretic and helps to reduce the swelling.

 

 

Creamy Baihe:

Baihe is a plant related to the lily family, a eatable water products with medical effect. This dish is cooked with milk, sugar, sesame oil and cornstarch. The dish is white and fresh taste, it is a very good snack in summer to get rid of one's heat in the body. The cooking must be done quickly and carefully to prevent the dish from sticking to the wok.
