Mutton (or Beef) Soup with Pancake Pieces (Yang Rou Pao Mo) As a famous Islamic snack, mutton (or beef) soup with pancake pieces is delicious and mellow, with a tempting smell. You tear a pancake into small pieces and soak the pieces in a bowl of the boiling mutton soup. The soaked pancake is chewy, the soup tasty, and the mutton tender. This type of food suits the weather of West China, and is very popular because it can ease away the chill of winter and warm the stomach.

Van Jiaozi Dumpling Banquet (Jiao Zi Yan) At the banquet, a wide variety of Jiaozi dumplings in different shapes and with different stuffing are served, fresh, delicious and nutritious.

Qishan's Saozi Noodles with Minced Meat (Qishan Sao Zi Mian) As early as in the Qing Dynasty, Qishan's saozi noodles of Shaanxi Province were famous for a spicy, sour and delicious taste, thin noodles and a good smell. Such noodles are prepared with high-quality flour, pork, eggs, day lilies and edible funguses, in addition to a wide variety of seasonings.
Qianzhou Hard Wheat Cake (Shi Tou Mo) In ancient times, Qianxian County in Shaanxi Province was called Qianzhou. As a popular local snack, Qianzhou hard wheat cake is as large as a lid of a cooking pot, thin on the edges and thick at the center. Hard, crisp and tasty, this wheat cake can be stored for quite a long time.

Fan's Pancake with Stewed Lazhi Meat (La Zhi Rou Jia Mo) As a famous snack of Van, Fan's pancake with stewed meat was first created by Fan Bingren and his son Fan Fengxiang, with a history of nearly 80 years. Prepared with highquality meat, Lazhi meat is well stewed with broth of the preceding years.

In Huashan, one can enjoy not only all the above-mentioned Shaanxi snacks, but also some special Huashan food, such as:
Noodles Shaved with Large Knife (Da Dao Mian)
Similar to the shaved noodles popular in Shanxi province, Da Dao Mian takes the dish one step further. A "Super Size" of sorts, the distinctive noodles are shaved with an extra large knife.
Seasoned with fried bean sauce, vinegar and pepper oil, like most Shaanxi food, the noodles are served in soup with bean curd and have a hot and sour flavor.
It's a common sight to see those partaking in Da Dao Mian wiping the sweat off their brows. But most find the dish's refreshing yet punchy chili fire intoxicating and they can't stop eating!
